By a landslide margin on Friday, Saint Paul Public Schools students and staff members called for Corn and Barley Ensalada to be added to the district’s cafeteria Choice Bars beginning in the fall. Eighty-seven percent of students and 58 percent of staff members selected Corn and Barley Ensalada, a dish made of corn, barley, scallions, tomatoes, jalapeno peppers and cilantro in cumin dressing. The Wild About Grains! contest was part of an effort to serve more whole grains that kids will love. Research has shown that consumption to whole grains has many health benefits. Whole grains are low in fat and have no cholesterol. They contain complex carbohydrates which supply energy for daily activities and are high in Vitamins B and E, minerals and valuable antioxidants.
